Sardines with Bean Thread Noodles Recipe

One of the most inexpensive and easy recipe to whip up for lunch. All ingredients for
under $10.00. Serves for 2.

Ingredients:

2 - 5.5 oz. cans sardines in tomato sauce (I used one regular and one spicy Ligo sardines)
8 oz. bean thread vermicelli noodles, soaked for at least 15 minutes and drained
3-4 cloves garlic, chopped
1 small size onion, sliced
1 small size tomato
Chopped green onion (optional)
salt and pepper to taste
2 Tbsp olive oil
1 cup water (or I just use two cans of water from the sardine cans) If you feel you need more liquid you can add accordingly.

In a large sauce pan over medium heat, saute garlic in olive oil until light brown.  Add onions and tomatoes and saute until tomato is soft.

Add the sardines including sauce and one cup water or two cans of water.  Bring to a slight boil and simmer for two minutes.  Season with salt and pepper to taste.

Add in the soaked bean thread noodles and continue to simmer while stirring until noodles are cooked.  Add half of the green onions and simmer another minute.

Remove from heat.  Serve hot. Garnish with remaining green onions. Kicker, squeezed a couple of lime wedges to bring out all the flavors. Enjoy!

Enjoy and let me know how it turns out.
